Mango Sticky Rice

Before Sweet Republic, Jan spent years living in Bangkok. Mango sticky rice was the dessert on every corner — ripe mango, warm coconut-soaked rice, a pinch of salt to keep it honest. It's one of those dishes that's perfect exactly as it is.

Turning it into a scoop meant keeping all three parts. Ripe mango folded through a coconut base for the fruit and the richness, and toasted sticky rice stirred in at the end so there's still something to chew.

It tastes like a hot night on a Bangkok sidewalk, which is a strange thing to find in a shop in Scottsdale. That's rather the idea.
